Savory Red Onion Clafoutis

Ingredients
- 3-4 medium red onions
- 100 g of flour
- 4 eggs
- 250 ml of milk
- 100 ml of fresh cream
- 100 g of grated Parmesan cheese
- Salt and pepper to taste
- Nutmeg (optional)
- 1 tablespoon of olive oil
- Butter for greasing the baking dish
Preparation
- Preheat the oven to 180 °C.
- Peel and slice the red onions, then sauté them in a pan with a tablespoon of oil over medium-low heat until they become translucent, allowing their natural sugar to develop.
- In the meantime, in a large bowl, beat the eggs with the milk and cream. Add the sifted flour to avoid lumps, then add the grated Parmesan. Mix well to obtain a homogeneous mixture.
- Season with salt, pepper, and if you like, a pinch of nutmeg to add an extra aroma.
- Grease a baking dish with butter and distribute the cooked onions on the bottom.
- Pour the egg and milk mixture over the onions in the prepared baking dish.
- Bake for about 30-35 minutes or until the surface is golden brown and the clafoutis is firm to the touch.
- Let it cool for a few minutes before serving.
