Savory Zucchini Tart

Ingredients
- 1 roll of round or rectangular puff pastry
- 3-4 medium zucchinis
- 200 g of ricotta cheese
- 100 g of grated cheese (parmesan or pecorino)
- 2 eggs
- Salt and pepper to taste
- Extra virgin olive oil
- Aromatic herbs (mint or basil) to taste
- 1 clove of garlic (optional)
Preparation
- Preheat the oven to 180 °C.
- Wash and slice the zucchinis into thin rounds. If you prefer, you can also grate them.
- In a pan, heat a drizzle of olive oil and fry the garlic to flavor the oil, then remove it and add the zucchinis. Cook for a few minutes until they are slightly softened. Season with salt and pepper to taste, then set aside to cool.
- In a bowl, mix the ricotta with the eggs, grated cheese, chopped herbs, salt, and pepper until you get a smooth mixture.
- Unroll the puff pastry and lay it on a baking tray lined with parchment paper. Prick it with a fork to prevent it from puffing up during baking.
- Spread the zucchinis over the puff pastry, and then pour the ricotta mixture over.
- Fold the edges of the pastry inwards to contain the filling.
- Bake the savory tart in the preheated oven and let it cook for 30-40 minutes or until the puff pastry is golden and crisp.
- Remove the tart from the oven and let it cool slightly before serving.
Note: The savory zucchini tart is very versatile; if you wish, you can add other ingredients such as diced cooked ham, halved cherry tomatoes, or slices of mozzarella to further enrich the flavor.
