Savory Pie with Peppers

The savory pie with peppers is a colorful and tasty dish, ideal for a lunch or light dinner, or as a starter in a buffet. Here’s how to prepare it.

Ingredients

  • 1 roll of puff pastry or shortcrust pastry
  • 2-3 peppers (of different colors for a more cheerful effect, for example, red, yellow, and green)
  • 1 medium onion
  • 200 g of fresh ricotta or another spreadable cheese
  • 100 g of grated cheese (pecorino, parmesan, or similar)
  • 3 eggs
  • Salt and pepper to taste
  • Extra virgin olive oil
  • Some fresh basil leaves (optional)
  • Butter for greasing the pan

Preparation

  1. Start by preheating the oven to 180 °C.
  2. Wash the peppers, remove the seeds and inner white parts, and cut them into strips or cubes.
  3. Finely slice the onion and sauté it in a pan with a drizzle of oil until it becomes translucent. Add the peppers and cook until they are soft but still al dente, season with salt and pepper to taste.
  4. In a bowl, mix the ricotta with the eggs and grated cheese until you have a smooth mixture. Adjust the seasoning with salt and pepper.
  5. Roll out the puff pastry or shortcrust pastry in a previously buttered pan, prick the bottom with the tines of a fork.
  6. Pour the cooked peppers onto the pastry base, then spread the ricotta and egg mixture on top, leveling with a spatula.
  7. Bake for about 30-40 minutes or until the surface is golden brown and the pastry is cooked.
  8. Let it cool for a few minutes before serving, decorating with some fresh basil leaves if desired.

Curiosity

The savory pie with peppers is a versatile dish that lends itself to numerous variations. If you are a fan of Italian flavors, you might add Taggiasca olives or capers for a more Mediterranean touch. Another great addition could be diced mozzarella, or for a bolder touch, some well-rinsed and chopped salted anchovies. Bon appétit!
