Savory Pie with Phyllo Dough

Ingredients
- 1 package of phyllo dough
- 200 g of fresh or frozen spinach
- 200 g of ricotta cheese
- 100 g of crumbled feta cheese
- 2 eggs
- Salt and pepper to taste
- Nutmeg to taste
- Extra virgin olive oil or melted butter to taste
Preparation
- Preheat the oven to 180 °C.
- If you are using frozen spinach, thaw and squeeze it out to remove the excess water. If using fresh spinach, briefly cook it in a pan with a drizzle of oil until wilted.
- In a bowl, mix the spinach with the ricotta and feta. Add the eggs. Season with salt, pepper, and a grating of nutmeg. Stir the mixture until you get a homogeneous filling.
- Take a round pan or a baking tray and grease it with some oil or melted butter.
- Place a layer of phyllo dough at the bottom of the pan, letting the edges hang over the side of the tray. Brush with oil or butter, then add another layer of dough. Continue like this for about 4-5 layers, each brushed with oil or butter.
- Pour the spinach and cheese filling over the phyllo dough base and level with a spoon.
- Fold the edges of the phyllo dough towards the center to close the pie, brushing again with oil or butter to make the dough stick.
- You may add a couple of layers of phyllo dough on top of the filling to close everything, always brushing with oil or butter.
- Bake for about 30-40 minutes or until the phyllo dough is golden and crispy.
- Let cool slightly before serving.
