Ingredients

  • 1 roll of brisée dough or puff pastry
  • 500 g of Chioggia radicchio
  • 200 g of scamorza (or another spun curd cheese)

  • Extra virgin olive oil
  • Nutmeg (optional)

Preparation

  1. Preheat the oven to 180 °C.
  2. Roll out the brisée dough or puff pastry in a quiche pan, prick the base with a fork and bake for about 10 minutes for a blanc bake.
  3. In the meantime, wash the Chioggia radicchio, cut it into strips and let it wilt in a pan with a drizzle of extra virgin olive oil, salt, and pepper. Continue cooking until soft.
  4. In a bowl, beat the eggs with the cooking cream, add salt, pepper, and a grating of nutmeg if desired.
  5. Cut the scamorza into cubes or strips.
  6. Once the brisée dough is slightly pre-baked, spread the wilted radicchio and cheese on top.
  7. Pour the egg and cream mixture over the layers of radicchio and cheese.
  8. Bake the savory pie again at 180 °C for about 25-30 minutes or until the surface is golden.
  9. Take out of the oven and let it cool for a few minutes before serving.
