Savory Tart with Cherry Tomatoes

Ingredients

  • 1 roll of ready-made puff pastry or shortcrust pastry
  • 250-300 g of cherry tomatoes
  • 200 g of fresh cheese (such as ricotta or goat cheese)
  • 100 g of grated cheese (such as Parmesan or Pecorino)
  • 2-3 eggs
  • Salt and pepper to taste
  • A few leaves of fresh basil
  • Extra virgin olive oil
  • A clove of garlic (optional)

Preparation

  1. Preheat the oven to 180 °C.
  2. If you decide to use garlic, briefly fry the clove in a little extra virgin olive oil, then remove it and use the oil to grease the bottom of a tart pan or a pie dish.
  3. Roll out the puff pastry or shortcrust pastry in the pan, pricking the bottom with a fork to prevent it from puffing up during cooking.
  4. In a bowl, mix the fresh cheese with eggs, grated cheese, salt, and pepper until you have a smooth mixture.
  5. Pour the cheese and egg mixture onto the puff pastry.
  6. Wash the cherry tomatoes, cut them in half or leave them whole if they are very small, and distribute them over the cheese mixture.
  7. Add hand-torn basil leaves to maintain their full aroma.
  8. Bake the savory tart for about 25-30 minutes or until the surface appears golden and the puff pastry is well cooked.
  9. Once baked, let it cool for a few minutes before serving.

You can serve this savory tart both hot and cold, and it’s great as a main dish or as an accompaniment to aperitifs or buffets. For a truly Italian touch, you could add Taggiasca olives or capers to further season. Pairing with a nice glass of fresh white wine is highly recommended!
