Savory Tart with Cherry Tomatoes

Ingredients
- 1 roll of ready-made puff pastry or shortcrust pastry
- 250-300 g of cherry tomatoes
- 200 g of fresh cheese (such as ricotta or goat cheese)
- 100 g of grated cheese (such as Parmesan or Pecorino)
- 2-3 eggs
- Salt and pepper to taste
- A few leaves of fresh basil
- Extra virgin olive oil
- A clove of garlic (optional)
Preparation
- Preheat the oven to 180 °C.
- If you decide to use garlic, briefly fry the clove in a little extra virgin olive oil, then remove it and use the oil to grease the bottom of a tart pan or a pie dish.
- Roll out the puff pastry or shortcrust pastry in the pan, pricking the bottom with a fork to prevent it from puffing up during cooking.
- In a bowl, mix the fresh cheese with eggs, grated cheese, salt, and pepper until you have a smooth mixture.
- Pour the cheese and egg mixture onto the puff pastry.
- Wash the cherry tomatoes, cut them in half or leave them whole if they are very small, and distribute them over the cheese mixture.
- Add hand-torn basil leaves to maintain their full aroma.
- Bake the savory tart for about 25-30 minutes or until the surface appears golden and the puff pastry is well cooked.
- Once baked, let it cool for a few minutes before serving.
You can serve this savory tart both hot and cold, and it’s great as a main dish or as an accompaniment to aperitifs or buffets. For a truly Italian touch, you could add Taggiasca olives or capers to further season. Pairing with a nice glass of fresh white wine is highly recommended!
