Artichoke Tart

Ingredients

  • 1 roll of puff pastry or brisée dough
  • 400 g of artichokes
  • 200 ml of cream
  • 3 eggs
  • 80 g of grated Parmesan cheese
  • Salt and pepper q.b.
  • Extra virgin olive oil
  • 1 clove of garlic
  • Chopped parsley q.b.

Preparation

  1. Start by cleaning the artichokes, removing the tougher outer leaves and the tips. Slice the artichokes into wedges and place them in lemon-soaked water to prevent them from blackening.

  2. Blanch the artichokes in salted water for about 10 minutes, then drain and chop them into small pieces.

  3. In a frying pan, lightly fry a clove of garlic with a stream of extra virgin olive oil, add the artichokes, and sauté for a few minutes. Season with salt and pepper, then add the chopped parsley.

  4. In a bowl, beat the eggs with the cream, grated Parmesan cheese, salt, and pepper.

  5. Roll out the puff pastry or brisée dough in a baking dish previously greased or lined with parchment paper.

  6. Distribute the artichokes on the base of the pastry, then pour the egg and cream mixture on top.

  7. Bake in a preheated oven at 180 °C for about 30-35 minutes or until the surface is golden brown and the pastry is well cooked.
