Parmigiana Savory Pie

The parmigiana savory pie is a tasty variant of the better-known eggplant parmigiana. This dish combines traditional Italian flavors in a different and original form. Here is the recipe:

Ingredients

  • 1 roll of brisée pastry or puff pastry
  • 2 medium eggplants
  • 250 g of tomato sauce
  • 200 g of mozzarella (or fiordilatte)
  • 100 g of grated parmesan cheese
  • Fresh basil
  • Olive oil
  • Salt and pepper

Preparation

  1. Preheat the oven to 180 °C.
  2. Cut the eggplants into slices about half a centimetre thick and grill them on a griddle or non-stick pan with a drizzle of oil until they are golden brown on both sides. Season them lightly with salt.
  3. Roll out the brisée pastry in a baking dish, possibly with the baking paper that comes with it, poking holes in the bottom with a fork.
  4. Spread a first spoonful of tomato sauce over the bottom of the brisée pastry.
  5. Create a first layer with the grilled eggplant slices, then add some tomato sauce, cubes of mozzarella, and sprinkle with a generous handful of parmesan and torn basil leaves.
  6. Repeat the layers until all the ingredients are used, finishing with a sprinkling of parmesan and a few basil leaves for decoration.
  7. Bake the parmigiana savory pie for about 30-35 minutes or until the pastry is golden brown and the mozzarella is well melted.
  8. Let the savory pie cool down before cutting into squares or portions as desired.
