Zucchini and provola savory muffins

Ingredients
- 250 g of flour
- 2 medium zucchinis
- 150 g of provola (or another melting cheese of your choice)
- 100 ml of milk
- 2 eggs
- 80 ml of extra virgin olive oil
- 1 packet of baking powder for savory cakes
- Salt to taste
- Pepper to taste
- A pinch of nutmeg (optional)
Preparation
- Preheat the oven to 180 °C and prepare a muffin tin, greasing it or lining it with paper liners.
- Wash and grate the zucchinis. You can choose to grate them with a large or fine hole grater, depending on the texture you prefer in the final muffin.
- Dice the provola into small cubes.
- In a bowl, beat the eggs with salt, pepper, and a pinch of nutmeg. Add the oil and milk and mix well.
- Incorporate the sifted flour with the baking powder, stirring to avoid lumps.
- Add the grated zucchini and diced provola to the batter and mix until you get a homogeneous mixture.
- Distribute the batter into the muffin tins, filling them about 3/4 full.
- Bake the muffins for about 20-25 minutes or until they turn golden and a toothpick inserted in the center comes out clean.
- Let the muffins cool for a few minutes in the tin, then remove them and serve warm or at room temperature.
