Zucchini and Mortadella Savory Muffins

Ingredients

  1. Preheat the oven to 180 °C and prepare a muffin tray by lining the cavities with paper liners or by greasing and flouring them if needed.
  2. Wash the zucchini and grate them with a coarse grater. Squeeze out the excess water from the grated zucchini well.
  3. Cut the mortadella into small cubes.
  4. In a bowl, beat the eggs with salt and pepper. Add the milk and olive oil and mix well to combine the ingredients.
  5. In another bowl, mix the flour with the yeast and grated Parmesan cheese.
  6. Fold the dry ingredients into the wet ingredients briefly mixing, without overworking the mixture.
  7. Add the grated zucchini and mortadella cubes to the batter and stir until they are evenly distributed.
  8. Fill each muffin cavity about 2/3 full with the mixture.
  9. Bake for about 20-25 minutes or until the muffins are golden and a toothpick inserted into the center of a muffin comes out clean.
  10. Leave the muffins in the oven for a few minutes, then transfer them to a wire rack to cool completely.
