Zucchini and Mortadella Savory Muffins

Ingredients
- 200 g of zucchini
- 100 g of mortadella
- 250 g of type 00 flour
- 2 eggs
- 100 ml of milk
- 80 ml of extra virgin olive oil

- 50 g of grated Parmesan cheese
Preparation
- Preheat the oven to 180 °C and prepare a muffin tray by lining the cavities with paper liners or by greasing and flouring them if needed.
- Wash the zucchini and grate them with a coarse grater. Squeeze out the excess water from the grated zucchini well.
- Cut the mortadella into small cubes.
- In a bowl, beat the eggs with salt and pepper. Add the milk and olive oil and mix well to combine the ingredients.
- In another bowl, mix the flour with the yeast and grated Parmesan cheese.
- Fold the dry ingredients into the wet ingredients briefly mixing, without overworking the mixture.
- Add the grated zucchini and mortadella cubes to the batter and stir until they are evenly distributed.
- Fill each muffin cavity about 2/3 full with the mixture.
- Bake for about 20-25 minutes or until the muffins are golden and a toothpick inserted into the center of a muffin comes out clean.
- Leave the muffins in the oven for a few minutes, then transfer them to a wire rack to cool completely.
