Savory Muffins with Prosciutto

Ingredients
- 150 g of flour
- 100 ml of milk
- 50 ml of extra virgin olive oil
- 2 eggs
- 100 g of prosciutto, cut into strips or cubes
- 80 g of grated cheese (parmesan, pecorino, or others as per your taste)
- 1 sachet of baking powder for savory preparations
- Salt and pepper to taste
- A pinch of nutmeg (optional)
- Aromatic herbs to taste (e.g. rosemary, thyme, oregano)
Preparation

Preheat the oven to 180 °C and prepare a muffin tin by lining the individual cavities with paper cups or by greasing and flouring them.

In a large bowl, mix the flour with the baking powder, a pinch of salt, pepper, and nutmeg to taste.

In another bowl, beat the eggs with the milk and oil, then stir well to obtain a homogeneous mixture.

Add the liquid mixture to the dry ingredients and mix with a spatula or wooden spoon until just combined.

Fold in the grated cheese, strips of prosciutto, and chopped aromatic herbs. Mix gently to distribute the ingredients evenly.

Fill the muffin cups to 3/4 of their capacity with the batter.

Bake the muffins in the preheated oven and cook for about 20-25 minutes or until they are puffed up and golden.

Do the toothpick test: insert it into the center of a muffin, if it comes out clean, the muffins are ready.
