Savory Muffins with Peas and Ham

Savory muffins with peas and ham are an excellent appetizer or snack. Here is the recipe to prepare them:

Ingredients

  • 250g of flour
  • 2 eggs
  • 100g of peas (fresh or frozen and then thawed)
  • 80g of diced cooked ham
  • 100ml of milk
  • 50ml of olive oil
  • 1 sachet of baking powder for savory preparations
  • Salt to taste
  • Pepper to taste
  • A handful of grated cheese (Parmesan or Pecorino)

Preparation

  1. Preheat the oven to 180 °C and prepare a muffin pan by lining it with the appropriate paper liners.
  2. If you are using fresh peas, boil them in lightly salted water for a few minutes until they become tender, then drain and set aside. If using frozen peas, make sure they are thoroughly thawed and drained.
  3. In a bowl, beat the eggs with a hand whisk. Add the milk and olive oil and continue to stir until you get a smooth mixture.
  4. In another bowl, mix the flour with the baking powder, salt, and pepper. Combine this mix with the liquid mixture and mix well.
  5. Add the peas, diced ham, and grated cheese to the mixture. Gently stir to evenly distribute the ingredients.
  6. Fill the paper liners with the mixture, filling them about 3/4 full.
  7. Bake the muffins in the preheated oven and cook them for about 20-25 minutes or until the surface becomes golden and, inserting a toothpick in the center of a muffin, it comes out clean.
  8. Once baked, let them cool on a rack before serving.
