Savory Muffins with Peas and Ham
17/11/2023Savory muffins with peas and ham are an excellent appetizer or snack. Here is the recipe to prepare them:
Ingredients
- 250g of flour
- 2 eggs
- 100g of peas (fresh or frozen and then thawed)
- 80g of diced cooked ham
- 100ml of milk
- 50ml of olive oil
- 1 sachet of baking powder for savory preparations
- Salt to taste
- Pepper to taste
- A handful of grated cheese (Parmesan or Pecorino)
Preparation
- Preheat the oven to 180 °C and prepare a muffin pan by lining it with the appropriate paper liners.
- If you are using fresh peas, boil them in lightly salted water for a few minutes until they become tender, then drain and set aside. If using frozen peas, make sure they are thoroughly thawed and drained.
- In a bowl, beat the eggs with a hand whisk. Add the milk and olive oil and continue to stir until you get a smooth mixture.
- In another bowl, mix the flour with the baking powder, salt, and pepper. Combine this mix with the liquid mixture and mix well.
- Add the peas, diced ham, and grated cheese to the mixture. Gently stir to evenly distribute the ingredients.
- Fill the paper liners with the mixture, filling them about 3/4 full.
- Bake the muffins in the preheated oven and cook them for about 20-25 minutes or until the surface becomes golden and, inserting a toothpick in the center of a muffin, it comes out clean.
- Once baked, let them cool on a rack before serving.
