Savory Muffins

Savory muffins are an excellent alternative to the more classic sweet muffins and lend themselves to many variations. Here I propose a basic version that you can customize to your liking with ingredients you prefer or have on hand, such as vegetables, cheeses, herbs, or even pieces of meat or fish.

Ingredients

  • 250 grams of flour
  • 2 eggs
  • 100 ml of vegetable oil
  • 100 ml of milk
  • 1 packet of baking powder for savory preparations
  • 150 grams of grated cheese (Parmesan, pecorino, or a mix)
  • Salt to taste
  • Pepper to taste
  • Ingredients of your choice for the filling: sun-dried tomatoes, olives, spinach, zucchini, peppers, cooked ham, salami, tuna, etc.

Preparation

  1. Preheat the oven to 180 °C and prepare a muffin pan, greasing it or lining it with paper liners.
  2. In a large bowl, whisk the eggs with the milk and oil until you get a homogeneous mixture.
  3. Add the sifted flour with the baking powder, grated cheese, salt, and pepper, and mix well.
  4. Add the ingredients you have chosen for the filling, previously chopped or cut into small pieces, and mix gently to distribute them evenly in the dough.
  5. Pour the mixture into the muffin molds, filling them about two-thirds full.
  6. Bake for 20-25 minutes or until the muffins are well browned and a toothpick inserted into the center comes out clean.
  7. Let them cool before unmolding.

Fun Facts

Savory muffins, like sweet ones, originated in the United States. However, this preparation lends itself very well to being “Italianized” with the use of typical Italian ingredients such as sun-dried tomatoes, buffalo mozzarella, basil, prosciutto crudo and much more.
