Savory Egg White Muffins

Ingredients
- 150 g of whole wheat flour
- 50 g of all-purpose flour
- 1 teaspoon of baking powder
- 1/2 teaspoon of baking soda
- 1 pinch of salt
- Black pepper to taste
- Aromatic herbs to taste (for example, rosemary or thyme)
- 250 ml of egg whites (about 8 large egg whites)
- 100 g of grated cheese (for example, Parmesan or Pecorino)
- 60 ml of extra virgin olive oil
- 100 g of diced cooked ham (optional)
- 50 g of cherry tomatoes, halved
Preparation

Preheat the oven to 180 °C (356 °F) and prepare a muffin tin, greasing it or lining it with paper liners.

In a large bowl, mix the whole wheat flour, all-purpose flour, baking powder, baking soda, salt, black pepper, and aromatic herbs.

In another bowl, slightly beat the egg whites, then add the grated cheese and olive oil, mixing well.

Combine the dry ingredients with the wet ones, stirring with a spatula until just blended without overworking the mixture.

If you are using the cooked ham and cherry tomatoes, add them now and gently fold into the batter.

Fill the paper liners or muffin tin compartments about 3/4 full.

Bake the muffins for about 20-25 minutes or until they are golden brown and a toothpick inserted in the center comes out clean.

Remove from the oven and let the muffins cool before serving.
If you wish for a vegetarian version, you can omit the cooked ham and add vegetables of your choice like chopped spinach, grated zucchini, or diced bell peppers.
