Cauliflower and Bacon Quiche

Ingredients

  • 1 roll of brisée or ready-made puff pastry
  • 1 medium cauliflower
  • 150 g of bacon cubes
  • 200 ml of cooking cream
  • 3 eggs
  • 100 g of grated cheese (such as Parmesan or Pecorino)
  • Salt and pepper to taste
  • Nutmeg to taste
  • Extra virgin olive oil
  • Butter for greasing the pan

Preparation

  1. Preheat the oven to 180 °C (356 °F).
  2. Grease a baking pan with some butter and roll out the brisée or puff pastry sheet, pricking the bottom with a fork.
  3. Wash the cauliflower, divide it into florets, and boil in salted water until tender but still firm, then drain it.
  4. In a non-stick pan, fry the bacon cubes until crispy. There’s no need to add oil, as the bacon will release its own fat.
  5. In a bowl, beat the eggs with the cream, add the grated cheese, salt, pepper, and a grating of nutmeg for flavor.
  6. Add the drained cauliflower and the crispy bacon to the egg and cream mixture and mix gently.
  7. Pour the mixture onto the pastry in the pan and distribute evenly.
  8. Bake for about 35-40 minutes, or until the surface of the quiche is golden brown and the pastry is cooked.
  9. Remove from the oven and let cool slightly before serving.

You can customize the recipe by adding other vegetables if you like, or use only smoked bacon for a more intense flavor. This quiche can be enjoyed both warm and at room temperature, perfect as an appetizer or for a light meal accompanied by a fresh green salad.
