- 1 roll of brisée dough or ready-made puff pastry
- 250g of buffalo mozzarella

Preparation
- Preheat the oven to 180 °C.
- Unroll the brisée pastry and lay it in a round savory pie dish, leaving the parchment paper under the dough. Prick the bottom with a fork to prevent it from puffing up during baking.
- Cut the buffalo mozzarella into slices and let it drain well to remove excess liquid.
- Slice the tomatoes not too thinly as well.
- Place a layer of mozzarella slices on the bottom of the brisée pastry, then cover them with a layer of tomato slices. Season with salt and pepper to taste.
- Add the basil leaves torn by hand and, if desired, a bit of dried oregano.
- Repeat the layers until the pie is filled, ideally finishing with a layer of tomatoes.
- Drizzle the surface with extra virgin olive oil.
