Savory Asparagus and Salmon Pie

The savory pie with asparagus and salmon is a spring dish, full of flavor and color. Here is the complete recipe:

Ingredients

  • 1 roll of puff pastry or shortcrust pastry
  • 300 g of fresh asparagus
  • 200 g of smoked salmon
  • 200 ml of fresh cream
  • 3 eggs
  • 50 g of grated cheese (Parmesan or Pecorino)
  • Salt and pepper to taste
  • 1 tablespoon of extra virgin olive oil
  • Butter for greasing the pan

Preparation

  1. Preheat the oven to 180 °C (350 °F).
  2. Clean the asparagus by removing the tough end of the stem and boil them in salted water for about 5-7 minutes until they are tender but still crunchy. Then drain and cut them into pieces, keeping the tips whole for decoration.
  3. In a pan, heat a drizzle of olive oil and briefly sauté the asparagus to flavor them.
  4. Roll out the puff or shortcrust pastry in a previously greased pan, piercing the bottom with a fork.
  5. Spread the pieces of smoked salmon and asparagus on the pastry base.
  6. In a bowl, beat the eggs with the cream, add the grated cheese, salt, and pepper to taste, and mix everything together.
  7. Pour the egg, cream, and cheese mixture over the base with asparagus and salmon.
  8. Decorate the surface with the asparagus tips set aside.
  9. Bake the savory pie for about 30-35 minutes or until the surface is golden brown and the pastry is well cooked.
  10. Allow to cool slightly before cutting and serving.

You can adjust the recipe to your personal tastes: for example, add some aromatic herbs to the filling, like dill or chives, to enhance the flavor of the salmon.

Fun Facts

This savory pie represents a cross between the flavors of Northern Europe, where smoked salmon is very common, and the Italian tradition of rustic pies. Asparagus and salmon complement each other perfectly, offering a balance of different flavors and textures. Serve it as a starter during a buffet or as a main course for a light lunch.
