Ingredients

  • 400 g of haddock, cut into bites

  • 2 tablespoons of extra virgin olive oil
  • 1 clove garlic, crushed
  • Chopped fresh parsley, to taste
  • Lemon juice
  • Salt and pepper, q.b. (as needed)

Preparation

  1. First, pat the haddock bites dry with paper towels. This will help achieve a more even cooking.
  2. Lightly flour the haddock bites. This step can help create a sort of golden crust when sautéed.
  3. Heat the oil in a large frying pan and, once hot, add the crushed garlic.
  4. When the garlic has browned slightly, add the floured haddock bites.
  5. Cook without moving the bites too much to prevent them from breaking. After a few minutes, when they have become golden, turn them gently to cook on the other side.
  6. Season with salt and pepper and cook until the fish is well-cooked and golden on all sides.
  7. Once done, squeeze some lemon juice over the bites and sprinkle with chopped fresh parsley.
  8. Serve immediately.
