Sausage in a Pan

Pan-fried sausage is a simple and appetizing dish, perfect for a quick dinner or a rustic lunch. Here’s how to prepare it Italian-style:

Ingredients

  • 4 pork sausages
  • 1 tablespoon of extra virgin olive oil
  • 1/2 glass of white wine (optional)
  • Salt and pepper to taste
  • Fresh rosemary (optional)

Preparation

  1. Prick the sausages with a fork; this will allow excess fat to escape and enable the seasonings to penetrate better during cooking.
  2. Heat the oil in a large frying pan over medium-high heat.
  3. Place the sausages in the pan and cook them, turning occasionally, until they are golden brown on all sides. This will take about 10 minutes.
  4. Lower the heat and add the white wine, if you wish to use it. Allow the alcohol to evaporate and continue cooking for about another 10 minutes, turning the sausages from time to time.
  5. Season with salt and pepper to taste and, if desired, add a sprig of rosemary to further flavor.
  6. Check the doneness of the sausages by pricking them with a fork; if clear liquid comes out, without any pink traces, they are ready.
  7. Deglaze everything with a splash of water if the sausages seem too dry and continue cooking for a few more minutes.
  8. Turn off the heat and let the sausages rest in their hot pan for a couple of minutes before serving.

Serve the sausages hot, perhaps accompanied by a side of roasted potatoes or a fresh green salad.
