Pasta with Sausage and Stracchino

Ingredients

  • 320 g of pasta (penne, rigatoni, or a type that holds the sauce well)
  • 200 g of fresh sausage
  • 150 g of stracchino cheese
  • 1/2 glass of white wine
  • 1 small onion
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)
  • A pinch of red pepper flakes (optional)

Preparation

  1. Start by bringing a pot of salted water to a boil for the pasta.
  2. Meanwhile, peel the sausage and crumble it with your hands or a fork.
  3. Finely chop the onion and sauté it in a pan with a drizzle of extra virgin olive oil until it becomes translucent.
  4. Add the crumbled sausage to the sauté and let it brown for a few minutes, then deglaze with the white wine and let it evaporate.
  5. Once the sausage is nicely browned, lower the heat and add the stracchino in pieces, stirring gently until the cheese begins to melt creating a cream. If you like, you can add a pinch of red pepper flakes here.
  6. Cook the pasta al dente according to the package instructions, then drain it, reserving some of the cooking water.
  7. Transfer the pasta to the pan with the sausage and stracchino sauce, mix well. If necessary, add some of the cooking water to make the sauce creamier.
  8. Dish out the pasta and, if desired, sprinkle with some grated Parmesan cheese and a drizzle of raw oil.
  9. Serve immediately.
