Gnocchi with Sausage and Stracchino

- 1 kg of potato gnocchi
- 400 g of sausage (preferably fresh)
- 200 g of stracchino cheese

- Chopped parsley for garnish (optional)
Preparation
- Start by preparing the ingredients. If you are using sausage in a casing, remove the casing and crumble the meat.
- Finely chop the onion and sauté it in a pan with a drizzle of extra virgin olive oil until it becomes translucent.
- Add the crumbled sausage to the pan with the onion and let it brown over medium-high heat, stirring occasionally.
- When the sausage starts to color, deglaze with white wine if you’ve chosen to use it, allowing the alcohol to evaporate.
- Lower the heat, cover the pan, and cook for about 10 minutes, adjusting for salt and pepper.
- In the meantime, bring a pot of salted water to a boil and cook the gnocchi according to the package instructions or until they float to the surface.
- Drain the gnocchi and add them to the pan with the sausage. If needed, add a ladleful of the cooking water to blend better.
- Turn off the heat and add the stracchino in pieces, stirring gently until the cheese begins to melt with the gnocchi and sausage.
- If desired, sprinkle with grated Parmesan cheese and garnish with chopped parsley.
