Sausage and Provolone Stuffed Meat Rolls

Ingredients

  • 8 thin slices of beef (for example, loin or topside cuts)
  • 300 g sausage
  • 150 g smoked or sweet provolone, according to taste, sliced
  • Extra virgin olive oil
  • Salt
  • Freshly ground black pepper
  • Beef broth, as needed
  • Dry white wine, for deglazing
  • Garlic, 1 clove
  • Rosemary, a few sprigs

Preparation

  1. If necessary, gently pound the meat slices between two sheets of food wrap to make them even thinner and more pliable.

  2. On the cutting board, lay out the meat slices; season both sides with salt and pepper.

  3. Remove the outer skin of the sausage and distribute some of its filling over each slice of meat.

  4. Add one or two slices of provolone to each slice of meat.

  5. Roll up the meat onto itself, creating rolls and, if necessary, secure them with a toothpick to keep them closed.

  6. In a large frying pan, heat a drizzle of oil with a garlic clove and some rosemary. Once hot and fragrant, remove the garlic and add the rolls.

  7. Brown the rolls on all sides to give them color.

  8. Deglaze with a splash of white wine and let the alcohol evaporate.

  9. Add a little beef broth at a time, cooking the rolls over moderate heat and covered, for about 20-30 minutes, adding more broth as it dries up.

  10. Ensure the rolls are cooked to the desired degree and the cheese inside has melted.

  11. Adjust salt and pepper, if necessary.

  12. Serve hot, perhaps with fresh rosemary as garnish.
