Sausage and potatoes in the oven is a rustic and hearty dish, perfect for a family dinner or with friends. Here is the recipe to prepare this delicious meal.

Ingredients

  • 600 g of fresh sausage
  • 800 g of potatoes
  • 2 sprigs of fresh rosemary
  • 2 cloves of garlic
  • Extra virgin olive oil as needed
  • Salt and pepper as needed

Preparation

  1. Preheat the oven to 200 °C.
  2. Peel the potatoes and cut them into uniformly sized pieces. Put them in a bowl with cold water for a few minutes to remove the excess starch; then, dry them with a clean cloth.
  3. Season the potatoes with extra virgin olive oil, salt, pepper, and minced garlic. Also, add the chopped rosemary and mix well to evenly distribute the seasoning.
  4. In a baking dish, drizzle some oil and lay the potatoes. Place in the oven and cook for about 20 minutes.
  5. In the meantime, prick the sausage with a fork in several places to prevent them from bursting during cooking.
  6. After 20 minutes, remove the baking dish from the oven and turn the potatoes, then place the sausage on top of them. Put back in the oven and cook for another 20-30 minutes, or until the potatoes are golden brown and the sausage is well cooked.
  7. Once cooked, let the dish rest for a few minutes before serving.

Italian variation: for an even more Italian touch, you could add a bay leaf along with the rosemary and a pinch of dried red chili pepper for a slight spicy kick.
