- 4 pork sausages

Preparation
- Start by washing and peeling the potatoes. Cut them into cubes of about 2 cm on each side to allow for even and fairly quick cooking.
- Thinly slice the onion and sauté it in a pan with a drizzle of extra virgin olive oil.
- Once the onion has become transparent and slightly golden, add the potatoes to the pan.
- Let the potatoes cook for about 10 minutes, turning them occasionally, until they start to turn golden.
- Meanwhile, in another pan, cook the sausages whole or cut into pieces, as you prefer, with a drizzle of oil. If you want to add an extra touch of flavor, you can deglaze with a bit of white wine once the sausages are well browned.
- After a few minutes, when the sausages are almost completely cooked, add them to the potatoes.
- Season with salt and pepper, and if you like, add some fresh rosemary to flavor.
- Cook together for a few minutes, until the potatoes are well cooked and the sausages are golden and crispy on the outside.
If you prefer, you can first cook the sausages in the pan and then use the fat released to cook the potatoes, to further flavor them. Serve hot, perhaps accompanied by a side of vegetables or a simple salad.
