Pasta with sausage and onion

Ingredients
- 320 grams of pasta (penne or rigatoni work well)
- 400 grams of sausage (preferably fresh)
- 2 medium onions
- 2 tablespoons of extra virgin olive oil
- 100 ml of white wine
- 400 grams of tomato puree
- Salt and pepper to taste
- Red pepper flakes (optional)
- Parmesan or grated Parmesan cheese for serving
Preparation
- First, peel the onions, slice them thinly, and set them aside.
- Remove the skin from the sausage and roughly crumble it.
- In a large pan, heat the extra virgin olive oil and add the sliced onions. Fry on medium-low heat until they become transparent and soft, but without browning them too much.
- Add the crumbled sausage and cook until it starts to color.
- Deglaze with the white wine and let the alcohol evaporate on high heat.
- Lower the heat, add the tomato puree and cook for about 20 minutes, stirring occasionally. If you like, you can also add some red pepper flakes to give the sauce a spicy touch.
- Meanwhile, bring a pot with plenty of salted water to a boil and cook the pasta until al dente according to the package instructions.
- Drain the pasta and pour it into the pan with the sausage and onion sauce. Mix well to combine the ingredients.
- Plate and sprinkle with Parmesan or grated Parmesan cheese to taste.
As the pasta cooks with the sauce, the sausage will release its fat and flavors, which will blend perfectly with the sweetness of the onions and the acidity of the tomato, creating a very pleasant balance of flavors on the palate.
And for a final touch, if you have fresh parsley, chop it and sprinkle it on the dish before serving to add a touch of color and freshness. Buon appetito!
