Pasta with sausage and gorgonzola

Pasta with sausage and gorgonzola is a creamy and flavorful dish that pairs the intense taste of gorgonzola cheese with sausage, creating a rich and enjoyable combination. Here is a basic recipe to prepare this dish:

Ingredients

  • 320 g of pasta (penne or rigatoni work well)
  • 200 g of sausage
  • 150 g of sweet gorgonzola
  • 1 small onion
  • 100 ml of cooking cream
  • grated Parmesan cheese to taste
  • Salt and black pepper q.b.
  • Extra virgin olive oil

Preparation

  1. Start by boiling the water for the pasta in a large pot and, once it boils, salt it and add the pasta.

  2. In the meantime, peel and finely chop the onion. Put a drizzle of extra virgin olive oil in a large pan and sauté the chopped onion until it becomes translucent.

  3. Remove the sausage from its casing and crumble it. Add it to the pan with the onion and let it brown until it’s well-colored and cooked.

  4. Cut the gorgonzola into cubes and add it to the pan. Allow it to melt slightly, then pour in the cream and stir until you obtain a creamy sauce. Adjust with salt and pepper.

  5. Drain the pasta al dente, reserving some of the cooking water, and transfer it to the pan with the gorgonzola and sausage sauce. Mix well, adding some cooking water if necessary to make the sauce more fluid.

  6. Serve the pasta hot, sprinkling with grated Parmesan cheese to taste.

Curiosity

Gorgonzola is a blue cheese that can be sweet or spicy. In our dish, we used the sweet type to better balance the flavors, but if you love more intense tastes, you can also try with spicy gorgonzola.
