Pasta salsiccia e pomodorini

Ingredients

  • 320 grams of pasta (penne, rigatoni, or other short pasta work well)
  • 400 grams of cherry tomatoes (cherry or grape variety)
  • 300 grams of sausage (preferably fresh pork sausage)

  • 1 clove of garlic
  • Extra virgin olive oil (as needed)

  • Pepper (as needed)

Preparation

  1. Start by boiling a pot of generously salted water to cook the pasta. Follow the instructions on the pasta package to achieve al dente texture. When the pasta is cooked, drain it, reserving some of the cooking water.

  2. In the meantime, wash the cherry tomatoes and cut them in half, or leave them whole if they are small.

  3. Remove the skin from the sausage and crumble it with your hands or with a fork.

  4. In a large skillet, heat a drizzle of oil and fry the garlic until golden. You can choose to remove it or leave it in for a more intense flavor.

  5. Add the crumbled sausage to the skillet and let it brown well, breaking it up further with a wooden spoon.

  6. Once the sausage has browned, deglaze with the white wine and let the alcohol evaporate over high heat.

  7. Add the cherry tomatoes, salt, pepper, and red pepper flakes to taste. Cook for about 10-15 minutes until the tomatoes start to break down, creating a light sauce.

  8. Pour the cooked pasta into the skillet with the sauce, adding cooking water as needed to make the sauce creamier and mix well.

  9. Serve the pasta, garnished with a fresh basil leaf and, if you like, add a sprinkling of pecorino or Parmesan cheese.
