Lasagne with Broccoli Rabe and Sausage

Ingredients

  • 250g of fresh lasagne
  • 500g of broccoli rabe
  • 300g of sausage
  • 200g of ready-made or homemade béchamel sauce
  • 100g of grated Parmesan cheese
  • 1 clove of garlic
  • Extra virgin olive oil
  • Salt
  • Pepper (optional)

Preparation

  1. Start by cleaning the broccoli rabe, removing any damaged leaves and the harder stems. Boil them in plenty of salted water for about 5-10 minutes, then drain them and chop roughly.

  2. In a pan, brown a clove of garlic in extra virgin olive oil and add the crumbled sausage. Cook until the sausage is well browned, then add the broccoli rabe and let it flavor for a few minutes. Adjust with salt and pepper to your taste.

  3. Prepare the béchamel, if you’re not using pre-made sauce. Heat some milk in a saucepan, and in another melt a piece of butter; to this add an equal amount of flour and create a roux, then pour the hot milk in and stir continuously to avoid lumps. Cook until the béchamel thickens, then salt to taste and turn off the heat.

  4. Prepare a baking dish for lasagne, greasing it with a bit of oil. Begin to compose the lasagne by alternating layers of pasta, broccoli rabe and sausage, béchamel, and grated Parmesan cheese.

  5. Continue to layer until you have used up all the ingredients, ending with a layer of béchamel and a generous sprinkling of Parmesan.

  6. Bake in a preheated oven at 180 °C for about 30-40 minutes, until the surface of the lasagne is golden and crispy.

  7. Let the lasagne rest for a couple of minutes before serving.
