Sandy Penne
17/11/2023Sandy Penne is a simple yet flavorful dish characterized by a crunchy breadcrumb coating that resembles sand. Here is the recipe:
Ingredients
- 320 g of penne rigate
- 200 g of stale bread crumbs
- 2 cloves of garlic
- Extra virgin olive oil as needed
- Salt as needed
- Black pepper as needed
- (Optional) Chopped parsley for garnish
Preparation
-
Bring a pot of salted water to a boil and cook the penne until al dente. Follow the package directions for cooking times.
-
Meanwhile, finely chop the breadcrumbs to a very fine consistency, almost like sand. You can do this using a mixer or a food processor.
-
Peel the garlic cloves and fry them in plenty of extra virgin olive oil in a large pan. Once golden, remove them from the oil and set aside.
-
Add the finely chopped bread crumbs to the hot oil and toast them until they are crispy and golden, stirring constantly to prevent burning.
-
Once the penne is cooked, drain it and set aside some of the cooking water.
-
Add the toasted penne to the pan with the breadcrumbs and mix well to combine the ingredients, adding a little of the reserved cooking water to make it creamier.
-
Adjust with salt and black pepper to taste.
-
Serve hot, garnished with chopped parsley if you wish for a touch of color and freshness.
This is a basic recipe that can be enriched with other ingredients of your liking, such as anchovies, capers, or olives, for an even more Mediterranean flavor.
