Sandwich Cake

Ingredients

  • 200 g of all-purpose flour
  • 150 g of sugar
  • 3 eggs
  • 100 ml of milk
  • 100 ml of seed oil or melted butter
  • 1 sachet of baking powder
  • A pinch of salt
  • Vanilla extract or grated lemon zest

For the cream:

  • 250 ml of whipping cream
  • 2 tablespoons of icing sugar
  • 1 sachet of vanillin or a bit of vanilla extract

For the decoration:

  • Fresh fruit of your choice (strawberries, kiwis, bananas, etc.)
  • Chocolate shavings or colored sprinkles

Preparation

  1. Preheat the oven to 180 °C.
  2. In a bowl, whip the eggs with the sugar until the mixture is light and fluffy.
  3. Add the oil or melted butter and milk, then mix gently.
  4. Incorporate the sifted flour, baking powder, salt, and selected flavoring, mixing the ingredients until you have a smooth batter.
  5. Pour the batter into a round baking pan that has been buttered and floured (or lined with parchment paper) and bake for about 30 minutes or until a toothpick inserted in the center comes out clean.
  6. Remove from the oven and let the base cool completely on a wire rack.

For the cream:

  1. Whip the cold cream with icing sugar and vanilla flavoring until it has a firm and fluffy consistency.

Assembling the cake:

  1. Cut the cake base horizontally to create two or three layers.
  2. Spread a generous amount of cream on one layer, add the chopped fruit, then place the second layer of cake on top.
  3. Repeat the process if you have created more layers.
  4. Finally, decorate the top layer with the remaining cream and garnish with fruit, chocolate shavings, or decorations of your choice.

The “Sandwich Cake” is very versatile and can be customized with different creams or fillings, such as chocolate cream, jams, or custard. It can be a nice idea for a picnic or casual occasion.
