The savory fritters with tuna and olives are a delicious and versatile snack, perfect for an appetizer or aperitif. Here is the recipe you can follow:

Ingredients

  • 150 g of flour
  • 2 eggs
  • 100 ml of milk
  • 1 can of tuna in olive oil (about 160 g)
  • 50 g of pitted and chopped green olives
  • 1 tablespoon of chopped capers (optional)
  • 1 pinch of salt
  • Pepper to taste
  • A pinch of baking powder for savory dishes or bicarbonate
  • Oil for frying (it can be olive or seed oil depending on your taste)

Preparation

  1. In a bowl, sift the flour with the baking powder and a pinch of salt.
  2. Add the eggs and milk and mix with a whisk until you get a smooth and lump-free batter.
  3. Drain the tuna well from the preservation oil and crumble it with a fork before adding it to the batter.
  4. Chop the green olives and capers; then add them to the batter.
  5. Season with a bit of pepper and if necessary, adjust the saltiness, although the tuna and olives are usually already savory.
  6. Heat plenty of oil in a frying pan and, once it has reached temperature, take spoonfuls of batter and gently pour them into the hot oil.
  7. Fry the fritters until they become golden on both sides, then drain them on paper towels to remove excess oil.
  8. Serve the fritters hot or warm, according to preference.
