Savory Vegetable Tart

Here is a recipe for a delicious savory vegetable tart, perfect for a light lunch or a dinner accompanied by a fresh salad.

Ingredients

  • 1 roll of ready-made brisée or puff pastry (or, if you want to make it from scratch: 250 g of flour, 125 g of cold butter, a pinch of salt, and about 4-6 tablespoons of cold water)
  • 1 zucchini
  • 1 bell pepper
  • 1 small eggplant
  • 100 g of cherry tomatoes
  • 200 g of ricotta cheese
  • 100 g of feta cheese (or another cheese of your choice)
  • 2 eggs
  • Salt and pepper to taste
  • Extra virgin olive oil
  • Aromatic herbs to taste (basil, thyme, oregano)

Preparation

  1. If you’re making the pastry at home, start by mixing the flour with cold, diced butter and a pinch of salt. Work the ingredients until you get a sandy mixture. Add the cold water, a few tablespoons at a time, until a homogeneous dough is formed. Shape into a ball, wrap it in cling film, and let it rest in the fridge for at least 30 minutes.

  2. Meanwhile, wash and cut the vegetables into small pieces or thin slices. In a pan, heat a stream of oil and cook the vegetables until they are slightly softened but still crisp. Season with salt and pepper to taste.

  3. In a bowl, beat the eggs and mix with the ricotta. Add the crumbled feta cheese, the chopped herbs, and finally the already cooked vegetables. Taste and adjust the seasoning with salt and pepper.

  4. Roll out the pastry into an even layer and line a tart tin previously greased or lined with baking paper. Prick the base with the tines of a fork.

  5. Pour the vegetable and ricotta mixture onto the pastry base and smooth it with a spatula or the back of a spoon.

  6. Bake the tart in a preheated oven at 180 °C for about 30-40 minutes or until the surface is golden brown and the pastry cooked.

  7. Remove from the oven and let it cool for a few minutes before serving.
