Preparation
- Start by preparing the brisée pastry: in a bowl, mix the sifted flour, cold butter, and salt. Using your fingertips, quickly work the butter into the flour until the mixture becomes crumbly.
- Gradually add the cold water, mixing until you can form a ball. Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 minutes.
- In the meantime, prepare the tuna mousse by mixing the well-drained tuna with cream cheese, fresh cream, chopped capers, salt, and pepper until smooth.
