Savory Tuna and Olive Spirals

The savory spirals with tuna and olives are a perfect snack for an aperitif or a buffet. Here’s how to prepare them:

Ingredients

  • 1 roll of rectangular puff pastry
  • 150 gr of oil-packed tuna, well drained
  • 100 gr of pitted green olives
  • 2 tablespoons of mayonnaise
  • 1 tablespoon of capers (optional)
  • 1 egg for brushing (optional)
  • Salt and pepper to taste

Preparation

  1. Preheat the oven to 180 °C.
  2. Lay out the rectangular puff pastry on a work surface.
  3. In a bowl, mix the drained tuna with mayonnaise until you have a smooth mixture. If you like capers, you can add them finely chopped to the mixture.
  4. Chop the green olives (you can do this with a knife or use a food processor to speed things up) and add them to the tuna mixture, mixing well.
  5. Spread the tuna and olive mixture evenly over the puff pastry, leaving a free margin on one of the long sides to help you close the spiral.
  6. Roll the rectangle of dough from the long side towards the side with the free margin, sealing the last edge well so that the roll does not open during cooking.
  7. Cut the roll into slices about 1-2 cm thick and place them on a baking sheet lined with parchment paper. If you wish, you can brush the spirals with a beaten egg to give them a golden finish on the surface.
  8. Bake for about 15-20 minutes or until the spirals are golden and crispy.
  9. Let them cool for a few minutes before serving.

The savory tuna and olive spirals can be enjoyed both hot and at room temperature. They are perfect for an aperitif or a party and pair well with a glass of fresh white wine or a light cocktail.

Fun Fact

The savory spirals are a variation of the “roll-ups” or “rolls”, typical of European and American cuisine. They can be made with a wide range of ingredients and are often found in buffets for their convenience and versatility.
