Rosemary Savory Biscuits

Rosemary savory biscuits are a delicious alternative for an aperitif or as a snack. Here is a simple recipe to prepare them.

Ingredients

  • 250g of flour
  • 100g of cold butter, cubed
  • 1 tablespoon of finely chopped fresh rosemary
  • 1 egg (and one yolk for brushing)
  • 1/2 teaspoon of salt
  • 1 pinch of sugar
  • 2 tablespoons of cold water (if necessary)

Preparation

  1. Preheat the oven to 180 °C.
  2. In a large bowl, mix the flour with the salt and sugar.
  3. Add the cold butter and work the mixture with your fingertips until it gets a sandy consistency.
  4. Add the chopped rosemary and the whole egg, and mix until a dough ball begins to form. If the dough is too dry, add a bit of cold water to help bind the ingredients.
  5. Transfer the dough onto a lightly floured surface and roll it out with a rolling pin to about 5mm thickness.
  6. Use a cookie cutter to shape the biscuits and place them on a baking tray lined with parchment paper.
  7. Brush the surface of the biscuits with the egg yolk to give them a shine and a golden color.
  8. Bake the biscuits for about 15-20 minutes or until golden brown.
  9. Allow the biscuits to cool on a rack before serving.
