Savory Ricotta and Cheese Biscuits

Ingredients
- 250 g of flour
- 150 g of ricotta
- 100 g of grated cheese (parmesan, pecorino, or a mix)
- 1 egg
- 80 g of cold butter, cubed
- 1 teaspoon of salt
- 1 teaspoon of baking powder for savory preparations
- Fresh herbs to taste (e.g., rosemary, thyme), finely chopped
- A pinch of black pepper
Preparation
- Preheat the oven to 180 °C and line a baking sheet with parchment paper.
- In a bowl, mix the flour with the baking powder, chopped herbs, salt, and pepper.
- Add the cold butter and work the mixture with your fingertips until you get a sandy consistency.
- Stir in the grated cheese.
- In another bowl, beat the egg with the ricotta until smooth.
- Combine the two mixtures and work the dough until it becomes compact and manageable. If necessary, adjust with a little bit of flour or water.
- Roll out the dough on a lightly floured surface until it is about 5 mm thick.
- Use a cookie cutter to cut out the biscuits into the desired shape.
- Arrange the biscuits on the prepared baking sheet, leaving some space between each one.
- Bake in the oven for about 15-20 minutes or until they are golden and crispy.
- Remove from the oven and let them cool on a rack before serving.

Savory biscuits are versatile and lend themselves to numerous variations. For example, instead of fresh herbs, you can add poppy seeds, sesame seeds, or spices like paprika or turmeric to give a different taste to each batch you prepare. Furthermore, if you want lighter biscuits, the ricotta can be partially replaced with low-fat fresh cheese.
