Savory Pancakes with DOP Parmesan Sauce

Here’s the recipe for delicious savory pancakes with DOP Parmesan sauce, a simple dish but with an all-Italian classy touch. When we say pancakes, we tend to think of the sweet variety typical of American breakfast, but this savory version is perfect for a brunch or a casual dinner.

Ingredients

For the pancakes:

  • 150 g of flour
  • 250 ml of milk
  • 2 eggs
  • 1 pinch of salt
  • 30 g of melted butter
  • 1 teaspoon of baking powder for savory cakes
  • 50 g of grated DOP Parmesan

For the DOP Parmesan sauce:

  • 200 ml of fresh cream
  • 100 g of grated DOP Parmesan
  • Salt and pepper to taste
  • Nutmeg as desired

Preparation

  1. Start by preparing the batter for the pancakes. In a large bowl, sift the flour with the baking powder and salt.
  2. In another bowl, lightly beat the eggs and then add the milk and cooled melted butter.
  3. Combine the liquid mixture with the dry ingredients, mixing with a whisk to avoid lumps. Add the grated Parmesan and blend everything together well.
  4. Heat a non-stick pan and, when it’s hot, pour a ladle of batter to form the pancakes. When bubbles appear on the surface and the edges begin to brown, flip the pancake and cook for another two minutes on the other side. Repeat until the batter is finished.
  5. For the Parmesan sauce, heat the cream in a small pot over low heat. Add the grated Parmesan, a pinch of salt, pepper, and nutmeg to taste, stirring until the cheese has melted into a dense and smooth sauce.
  6. Serve the pancakes hot with the Parmesan sauce poured over or beside for dipping.
