Savory Olive Biscuits

Ingredients

  • 200 g of all-purpose flour
  • 100 g of cold butter, cubed
  • 80 g of pitted and chopped green or black olives (depending on your preference)
  • 1 egg
  • 1 tablespoon of milk
  • 1 tablespoon of grated Parmesan cheese
  • 1 teaspoon of baking powder for savory dishes
  • Salt to taste
  • Black pepper to taste

Preparation

  1. In a bowl, sift together the flour and baking powder, then add a pinch of salt and black pepper to taste.
  2. Add the cold butter pieces to the bowl with the flour and start to work the dough with the tips of your fingers until you get a sandy mixture.
  3. Incorporate the grated Parmesan and chopped olives. Mix so that the ingredients are well distributed.
  4. Lightly beat the egg with the milk and add it to the dry ingredients. Work the dough briefly, just enough time to form a ball.
  5. Wrap the dough in cling film and let it rest in the refrigerator for at least 30 minutes.
  6. After the resting time, preheat the oven to 180 °C.
  7. Roll out the dough on a lightly floured surface, to a thickness of about 5 mm.
  8. With a cookie cutter or a glass, cut out the biscuits and place them on a baking sheet lined with parchment paper.
  9. Bake the biscuits for about 15-20 minutes or until they are golden and crispy.
  10. Remove the biscuits from the oven and let them cool on a wire rack before serving.
