Savory Olive Biscuits

Ingredients
- 200 g of all-purpose flour
- 100 g of cold butter, cubed
- 80 g of pitted and chopped green or black olives (depending on your preference)
- 1 egg
- 1 tablespoon of milk
- 1 tablespoon of grated Parmesan cheese
- 1 teaspoon of baking powder for savory dishes
- Salt to taste
- Black pepper to taste
Preparation
- In a bowl, sift together the flour and baking powder, then add a pinch of salt and black pepper to taste.
- Add the cold butter pieces to the bowl with the flour and start to work the dough with the tips of your fingers until you get a sandy mixture.
- Incorporate the grated Parmesan and chopped olives. Mix so that the ingredients are well distributed.
- Lightly beat the egg with the milk and add it to the dry ingredients. Work the dough briefly, just enough time to form a ball.
- Wrap the dough in cling film and let it rest in the refrigerator for at least 30 minutes.
- After the resting time, preheat the oven to 180 °C.
- Roll out the dough on a lightly floured surface, to a thickness of about 5 mm.
- With a cookie cutter or a glass, cut out the biscuits and place them on a baking sheet lined with parchment paper.
- Bake the biscuits for about 15-20 minutes or until they are golden and crispy.
- Remove the biscuits from the oven and let them cool on a wire rack before serving.
