Savory Madeleines

Savory Madeleines are a non-sweet version of the classic French cake. They can be enriched with various herbs, cheeses, or even speck or ham. Here’s a basic recipe that you can customize to your liking.

Ingredients

  • 130 g of flour
  • 10 g of baking powder for savory cakes
  • 2 large eggs
  • 90 g of melted and cooled butter
  • 50 ml of milk
  • 50 g of grated cheese (such as Parmesan or Gruyère)
  • Salt and pepper to taste
  • Aromatic herbs of choice (rosemary, thyme, chives), finely chopped
  • Optional: pieces of ham or speck, chopped olives, minced sun-dried tomatoes, etc.

Preparation

  1. Preheat the oven to 180 °C (350 °F) and butter or oil the Madeleine mold.
  2. In a large bowl, beat the eggs with salt and pepper until they become frothy and light.
  3. Add the grated cheese and chopped herbs, mix well.
  4. Combine the flour previously sifted with the baking powder. Gently fold in without deflating the mixture.
  5. Gradually incorporate the melted butter and milk, until you have a homogeneous mixture.
  6. If you wish to add other savory ingredients such as speck, ham, or vegetables, fold them gently into the batter.
  7. Fill the Madeleine molds about 3/4 full to allow the cake to puff during baking.
  8. Bake for about 10-12 minutes or until the Madeleines are golden brown and puffed.
  9. Remove from the oven and let cool slightly before unmolding.

Savory Madeleines can be served as an appetizer or as an accompaniment to soups and salads. Experiment with different herbs and additives to create a new version every time!
