Ingredients
- 200g of smoked salmon
- 200g of ricotta
- 150g of asparagus
- 100g of prawns
- Salt and pepper to taste
- 3 tablespoons of extra virgin olive oil
- 1 rectangular roll of puff pastry
- Dill or chopped chives for garnish
- Lemon juice (a couple of tablespoons)

Start with the salmon mousse: in a blender, puree the smoked salmon with the ricotta until you have a smooth mixture. If necessary, add a pinch of salt and pepper and a little lemon juice to enhance the flavor.

Clean the asparagus well and boil them in slightly salted water until they are tender but still crunchy, then cut them into pieces, preserving the tips for decoration.

Peel the prawns, removing the shell and the gut. You can briefly sear them in a pan with a little oil and a pinch of salt.

Preheat the oven to 200°C.

Roll out the puff pastry on a work surface. Cut the edges to obtain a regular rectangle and prick the base with a fork.

Spread the salmon mousse on the puff pastry, leaving a border of about 2 cm. Distribute the pieces of asparagus and prawns over the salmon mixture.

Carefully roll up the puff pastry starting from the long side, wrapping it as tightly as possible. Seal the edges well.

Place the log on a baking tray lined with parchment paper and brush the surface with a little extra virgin olive oil.

Bake the log for about 20-25 minutes or until it is golden brown and fragrant. Let it cool before cutting.
