Zucchini Savory Cheesecake

Ingredients
- 200 g of savory biscuits (such as crackers or Taralli)
- 100 g of melted butter
- 400 g of zucchini
- 250 g of ricotta
- 150 g of fresh goat cheese
- 100 g of grated cheese (Parmesan or Pecorino)
- 3 eggs
- Salt and pepper to taste
- Extra virgin olive oil
- Aromatic herbs to taste (basil, mint, thyme)
- Garlic (optional)
Preparation
- Start by finely chopping the savory biscuits until you get a consistency similar to breadcrumbs. Mix the crumbs with the melted butter until you get a homogeneous mixture.
- Line the bottom of a springform pan with parchment paper and press the biscuit mixture onto the bottom to create the cheesecake base. Compact well and put in the fridge to cool.
- Wash the zucchini and cut them into thin slices. In a pan, heat a drizzle of oil and if you wish, a clove of garlic to flavor the oil, then remove it. Add the sliced zucchini and sauté until they become soft and slightly golden. Season with salt and pepper to taste.
- In a bowl, mix ricotta with goat cheese and grated cheese. Add the eggs and a pinch of salt and pepper, and blend all the ingredients well.
- Take the cooked zucchini and let them cool. If you have chosen to use aromatic herbs, chop them finely and add them to the cheese cream.
- Pour half of the cheese cream over the cooled biscuit base. Arrange a layer of zucchini on top and cover with the rest of the cream.
- Preheat the oven to 180 °C and bake the savory cheesecake for about 30-40 minutes, or until the surface is golden and the cheesecake is firm to the touch.
- Let the cheesecake cool in the refrigerator for at least 3-4 hours before unmolding and serving.
