Savory Cheese Crêpes

Ingredients
- 150 g of flour
- 2 eggs
- 300 ml of milk
- A pinch of salt
- 30 g of melted butter
- Butter, as needed, for greasing the pan
- 200 g of grated cheese (you can use Fontina, Emmental, mozzarella, or a mix of cheeses to taste)
- Salt and pepper, to taste
- Aromatic herbs to taste (e.g., chopped parsley or chives)
Preparation
- In a large bowl, sift the flour and form a well in the center.
- Crack the eggs into the center of the well and start mixing with a whisk, gradually incorporating the flour.
- Gradually add the milk, continuing to mix to avoid lumps.
- Add the pinch of salt and the melted butter, mixing until you have a smooth and homogeneous batter. Let the batter rest for at least 30 minutes in the refrigerator.
- Heat a non-stick crêpe pan (or a normal small diameter pan) and grease it lightly with some butter.
- Pour a ladleful of batter into the hot pan and tilt it to evenly distribute the liquid over the entire surface.
- Cook the crêpe for about 1-2 minutes or until the edge begins to turn golden, then flip it and cook for another minute on the opposite side.
- Once you flip the crêpe, sprinkle it with the grated cheese and allow it to melt slightly. Add salt, pepper, and aromatic herbs if you wish.
- Fold the crêpe into four or roll it up and serve immediately.
Repeat the process for each crêpe until the batter is used up, adding butter to the pan between crêpes as necessary.
