Savory Ciambella

Here is a recipe for a delicious savory ciambella, perfect as an appetizer or snack.

Ingredients

  • 250 g of flour
  • 3 eggs
  • 100 g of grated cheese (Parmesan or Pecorino)
  • 100 ml of extra virgin olive oil
  • 100 ml of milk
  • 1 packet of baking powder for savory cakes
  • 200 g of mixed cold cuts of your choice (cooked ham, salami, bacon, speck)
  • 150 g of mixed cheeses of your choice (mozzarella, Asiago, Emmental, or other stretch or semi-hard cheeses)
  • Salt and pepper to taste
  • Butter and flour for the mold

Preparation

  1. Preheat the oven to 180 °C.
  2. In a large bowl, beat the eggs with a whisk or a fork.
  3. Add the grated cheese and mix well.
  4. Incorporate the olive oil and milk, continuing to stir to get a smooth mixture.
  5. Cut the cold cuts and cheeses into cubes and add them to the batter.
  6. Sift the flour with the baking powder for savory cakes and add it to the mixture.
  7. Salt and pepper to taste and mix well until you have a soft, lump-free dough.
  8. Butter and flour a ciambella mold.
  9. Pour the mixture into the mold and level it with a spatula.
  10. Bake the savory ciambella for about 30-40 minutes, or until it becomes golden and passes the toothpick test (it should come out clean).

Once baked, let the savory ciambella cool slightly before unmolding.
