Salted Caramel Cheesecake
17/11/2023I can offer you a recipe for a delicious salted caramel cheesecake. Here’s how you can prepare it, with an Italian twist that will add a pinch of originality to your dessert.
Ingredients
- 250 g of dry biscuits (such as Digestive or butter cookies)
- 100 g of melted butter
- 500 g of cream cheese (like Philadelphia)
- 120 g of powdered sugar
- 300 ml of fresh cream
- 1 packet of vanillin or the seeds from 1 vanilla pod
- Salted caramel, ready-made or homemade
- Coarse sea salt (optional, for garnish)
Preparation
- Finely grind the biscuits in a food processor or by placing them in a bag and rolling them with a rolling pin. Mix the ground biscuits with the melted butter until you have a homogeneous mixture.
- Line the bottom of a springform pan (preferably 22-24 cm in diameter) with parchment paper and press the biscuit mixture into the bottom to create the base. Refrigerate to cool for at least 30 minutes.
- In the meantime, in a bowl, mix the cream cheese with powdered sugar and vanillin (or vanilla seeds) until you have a smooth and homogeneous mixture.
- In another bowl, whip the cream until it becomes firm, then gently fold it into the cream cheese mixture, trying not to deflate it.
- Pour the resulting cream over the biscuit base and level the surface with a spatula. Let it cool in the fridge for at least 4 hours, or even better, overnight.
- Before serving, pour over the salted caramel and, if you like, a sprinkle of coarse sea salt flakes to enhance the contrast with the sweetness.
If you wish to make the salted caramel at home, you can slowly dissolve sugar in a saucepan until it becomes golden, add butter and a pinch of salt and then, off the heat, pour in the fresh cream, stirring constantly. Let it cool before using.

Salted caramel is a French preparation, known as “Caramel au beurre salé”, typical of Brittany. The addition of sea salt enhances the sweetness of the caramel, creating a flavor contrast that perfectly matches the creaminess of the cheesecake.
