Salmon with Vegetables
17/11/2023I can propose a simple and tasty recipe for making salmon with vegetables. This dish will be a great way to enjoy the benefits of fish and vegetables, creating a balanced harmony of flavors.
Ingredients
- 4 salmon steaks (about 150-200 g each)
- 2 zucchini
- 2 carrots
- 1 red bell pepper
- 1 yellow bell pepper
- Salt and pepper to taste
- Extra virgin olive oil
- Juice of 1 lemon
- 1 clove of garlic
- Aromatic herbs to taste (for example, thyme or rosemary)
Preparation
- Start by washing all the vegetables. Cut the zucchini and carrots into sticks, and the peppers into strips after removing seeds and internal filaments.
- In a large pan, heat a drizzle of extra virgin olive oil and add a crushed garlic clove. Let it brown and then remove the garlic.
- Add the vegetables to the pan and sauté over medium-high heat for about 5-7 minutes or until they have softened but are still crunchy. Season with salt and pepper.
- Meanwhile, season the salmon steaks with salt, pepper, and a bit of lemon juice.
- In a second pan, heat a drizzle of oil and lay the salmon steaks skin side down. Cook for about 3-4 minutes per side, depending on the thickness of the steaks, until the skin is crispy and the flesh is cooked but still moist inside.
- Once both the salmon and the vegetables are ready, arrange a bed of vegetables on a plate and place the salmon steak on top.
- Garnish with fresh aromatic herbs and a splash of lemon juice before serving.
To add an extra Italian touch, you might sprinkle a pinch of dried or fresh oregano on the fish before cooking it or finish it off with a drizzle of raw olive oil when serving. Enjoy your meal!
