Limoncino Salmon

Limoncino salmon is a simple and tasty preparation that enhances the flavor of the fish with the freshness of citrus. Here is the recipe for a deliciously fragrant dish.

Ingredients

  • 4 salmon steaks (about 200 g each)
  • 2 untreated lemons
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper to taste
  • 1 sprig of fresh thyme (or 1 teaspoon of dry thyme)
  • 2 cloves of garlic
  • Chopped fresh parsley, to garnish

Preparation

  1. Preheat the oven to 200 °C (180 °C if fan-assisted).
  2. Wash the lemons and slice them into thin rounds.
  3. Take a baking sheet or an oven-proof dish and line it with parchment paper.
  4. Arrange half of the lemon slices on the parchment paper, creating a “bed” for the salmon steaks.
  5. Season the salmon steaks with salt, pepper, and a drizzle of extra virgin olive oil. If possible, also squeeze some fresh lemon juice over the fish to intensify its flavor.
  6. Place the salmon steaks on the lemon bed in the baking sheet, then cover them with the remaining lemon slices.
  7. Add the crushed garlic cloves (you can leave them unpeeled) and fresh thyme over and around the salmon.
  8. Bake the salmon for about 12-15 minutes, or until the fish reaches the desired doneness.
  9. Once ready, remove from the oven and sprinkle with chopped fresh parsley before serving.
