Citrus Salmon with Pilaf Rice

Here is a recipe to prepare Citrus Salmon with Pilaf Rice that blends international cuisine with an Italian touch.

Ingredients for the Citrus Salmon:

  • 4 salmon fillets
  • Salt and pepper to taste
  • Extra virgin olive oil
  • 1 orange
  • 1 lemon

Ingredients for the Pilaf Rice:

  • 200 g of long-grain rice
  • 1 small onion
  • 500 ml of vegetable broth
  • 30 g of butter
  • Extra virgin olive oil
  • Salt to taste

Preparation of the Citrus Salmon:

  1. Preheat the oven to 200°C.
  2. Wash and dry the salmon well; season with salt and pepper.
  3. Grease a baking dish with a drizzle of extra virgin olive oil and place the salmon fillets in it.
  4. Squeeze the juice of the lemon and orange and slice the peels into segments, removing the bitter white part.

  6. Let the rice rest for a few minutes, then fluff it with a fork before serving.
