Salmon Steaks with Asparagus and Cream

I will describe how to prepare delicious salmon steaks with asparagus and cream.

Ingredients

  • 4 salmon steaks (about 150-200g each)
  • 500g of fresh asparagus
  • 200ml of cooking cream
  • 1 lemon (juice)
  • Salt and pepper to taste
  • Extra virgin olive oil
  • 1 clove of garlic
  • Chives or dill for garnish (optional)

Preparation

  1. Start by cleaning the asparagus, removing the woodier bottom part of the stems, then wash them. If the asparagus is particularly thick, you may peel them slightly with a vegetable peeler to make the cooking more even.

  2. Boil a pot of salted water. Once it starts boiling, immerse the asparagus and let them cook for about 3-5 minutes until they are tender yet still crisp. Drain and put them in cold water to stop the cooking process and maintain a bright green color.

  3. In a pan, heat a drizzle of extra virgin olive oil and add the whole garlic clove. Brown the garlic then remove it.

  4. In the same pan, add the salmon steaks, previously seasoned with salt and pepper. Cook the salmon for 3-4 minutes per side, until golden on the outside and still slightly pink inside. Halfway through, drizzle the steaks with lemon juice.

  5. Remove the salmon and in the same pan add the cream. Let it heat over medium flame, then add the asparagus and let them flavor for a few minutes, adjusting salt and pepper.

  6. Serve the salmon steaks accompanied by the cream and asparagus sauce. Finish with chopped chives or dill and, if you like, an additional spray of lemon juice.
