Ingredients
- 8 thin slices of swordfish
- 1 green apple
- 1 shallot
- Juice of half a lemon
- 100 ml of white wine
- Extra virgin olive oil
- Salt and pepper to taste
- Chopped parsley to garnish

Start by cleaning the swordfish, making sure the slices are thin and skinless. If necessary, lightly beat them with a rolling pin between two sheets of parchment paper to thin them out further.

Season the swordfish slices with salt and pepper on both sides.

Peel the apple and cut it into very small cubes. Put the cubes in a bowl and dress with lemon juice to prevent them from browning.

Finely chop the shallot and sauté it in a pan with a drizzle of extra virgin olive oil until it becomes transparent.
