Salmon Quiche with Asparagus and Leeks

Ingredients
For the shortcrust pastry:
- 200 g of type 00 flour
- 100 g of cold butter, cubed
- 1 egg
- A pinch of salt
For the filling:
- 200 g of smoked salmon
- 1 bunch of fresh asparagus
- 1 medium-sized leek
- 3 eggs
- 200 ml of fresh cream
- 50 ml of milk
- 50 g of grated Parmesan cheese
- Salt and pepper to taste
- Butter and flour for the mold

Start with the shortcrust pastry: in a bowl, mix the flour with the cold butter until you get a sandy mixture. Add the egg and a pinch of salt and knead until it forms a smooth ball. Wrap it in plastic wrap and let it rest in the fridge for about 30 minutes.

Meanwhile, clean the asparagus by removing the toughest part of the stem and cut them into pieces. Blanch them in salted boiling water for about 2-3 minutes, then drain and plunge them into ice water to maintain the color.

Clean and slice the leek, then let it wilt in a pan with a drizzle of extra virgin olive oil or a knob of butter.

Roll out the shortcrust pastry into a thin layer and line a previously buttered and floured quiche mold. Prick the bottom with a fork.

In a bowl, beat the eggs with cream and milk, add Parmesan, salt and pepper, and mix everything well.

Spread the smoked salmon, asparagus, and leek over the shortcrust pastry.

Pour the egg and cream mixture over the filling and level it well.

Bake at 180°C for about 30-35 minutes or until the surface of the quiche is golden brown and the filling is set.

Remove the quiche from the oven and let it rest a few minutes before serving.
